Instructions:

  1. Prepare the mixture:
    • In a mixing bowl, combine the steamed vegetables, mashed potato, breadcrumbs, Parmesan (if using), flour, onion, garlic, paprika, oregano, parsley, salt, and pepper. Mix until it forms a cohesive dough-like consistency.
  2. Shape the croquettes:
    • Scoop small portions of the mixture (about 2 tablespoons each) and shape them into cylinders, ovals, or small patties.
  3. Bread the croquettes:
    • Dip each croquette into the beaten egg, then coat it in breadcrumbs. Ensure they are evenly coated for a crispy texture.
  4. Preheat the air fryer:
    • Set your air fryer to 375°F (190°C) and preheat for 3-5 minutes.
  5. Cook the croquettes:
    • Lightly spray the croquettes with cooking spray and arrange them in a single layer in the air fryer basket. Avoid overcrowding.
    • Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
