Air Fryer Vegetable Croquettes

Ingredients:
- 2 cups mixed vegetables (carrots, peas, corn, green beans), steamed and finely chopped
- 1 medium potato, boiled and mashed
- 1/4 cup breadcrumbs (plus more for coating)
- 1/4 cup grated Parmesan cheese (optional)
- 2 tbsp all-purpose flour
- 2 tbsp finely chopped onion
- 1 garlic clove, minced
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 1/4 cup fresh parsley or cilantro, finely chopped
- 1 egg, beaten (for coating)
- Cooking spray

Instructions:
- Prepare the mixture:
- In a mixing bowl, combine the steamed vegetables, mashed potato, breadcrumbs, Parmesan (if using), flour, onion, garlic, paprika, oregano, parsley, salt, and pepper. Mix until it forms a cohesive dough-like consistency.
- Shape the croquettes:
- Scoop small portions of the mixture (about 2 tablespoons each) and shape them into cylinders, ovals, or small patties.
- Bread the croquettes:
- Dip each croquette into the beaten egg, then coat it in breadcrumbs. Ensure they are evenly coated for a crispy texture.
- Preheat the air fryer:
- Set your air fryer to 375°F (190°C) and preheat for 3-5 minutes.
- Cook the croquettes:
- Lightly spray the croquettes with cooking spray and arrange them in a single layer in the air fryer basket. Avoid overcrowding.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
