Air Fryer Spinach and Feta Puff Pastry by Tracy

Ingredients:

  • 1 sheet puff pastry (thawed)
  • 1 cup fresh spinach (chopped)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup cream cheese (softened)
  • 1 egg (beaten, divided)
  • 1 garlic clove (minced)
  • Salt and pepper to taste
  • Optional: pinch of nutmeg or red pepper flakes
  • Optional: sesame seeds for topping

Instructions:

  1. Prep the filling:
    • In a bowl, mix together chopped spinach, feta cheese, cream cheese, minced garlic, a pinch of salt, pepper, and optional spices.
    • Add about 1 tablespoon of beaten egg to help bind the filling (reserve the rest for brushing).
  2. Prep the pastry:
    • Roll out the thawed puff pastry and cut it into squares (about 3×3 inches for snack-size or larger for turnovers).
    • Place a spoonful of filling in the center of each square.
  3. Fold and seal:
    • Fold the pastry into triangles or rectangles, pressing edges with a fork to seal.
    • Brush the tops with the remaining beaten egg.
    • Sprinkle with sesame seeds if using.
  4. Air fry:
    • Preheat air fryer to 375°F (190°C).
    • Place pastries in a single layer in the air fryer basket (don’t overcrowd).
    • Air fry for 8–10 minutes or until golden brown and puffed.
  5. Cool & serve:
    • Let cool slightly before serving. Enjoy warm!
