Air Fryer Spinach and Feta Puff Pastry by Tracy

Ingredients:
- 1 sheet puff pastry (thawed)
- 1 cup fresh spinach (chopped)
- 1/2 cup crumbled feta cheese
- 1/4 cup cream cheese (softened)
- 1 egg (beaten, divided)
- 1 garlic clove (minced)
- Salt and pepper to taste
- Optional: pinch of nutmeg or red pepper flakes
- Optional: sesame seeds for topping

Instructions:
- Prep the filling:
- In a bowl, mix together chopped spinach, feta cheese, cream cheese, minced garlic, a pinch of salt, pepper, and optional spices.
- Add about 1 tablespoon of beaten egg to help bind the filling (reserve the rest for brushing).
- Prep the pastry:
- Roll out the thawed puff pastry and cut it into squares (about 3×3 inches for snack-size or larger for turnovers).
- Place a spoonful of filling in the center of each square.
- Fold and seal:
- Fold the pastry into triangles or rectangles, pressing edges with a fork to seal.
- Brush the tops with the remaining beaten egg.
- Sprinkle with sesame seeds if using.
- Air fry:
- Preheat air fryer to 375°F (190°C).
- Place pastries in a single layer in the air fryer basket (don’t overcrowd).
- Air fry for 8–10 minutes or until golden brown and puffed.
- Cool & serve:
- Let cool slightly before serving. Enjoy warm!
