Air fryer southwest egg rolls
Ingredients:
- 1 cup cooked chicken breast (shredded)
- 1/2 cup black beans (drained and rinsed)
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup red bell pepper (diced)
- 1/2 cup shredded cheese (cheddar, pepper jack, or a blend)
- 1/4 cup green onions (chopped)
- 1/4 cup cilantro (chopped)
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 6-8 egg roll wrappers
- Cooking spray
Instructions:
- Prepare the filling: In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, shredded cheese, green onions, cilantro, chili powder, cumin, paprika, garlic powder, salt, and pepper. Mix well.
- Assemble the egg rolls: Lay an egg roll wrapper flat, with one corner pointing toward you. Place 2-3 tablespoons of the filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a bit of water.
- Preheat air fryer: Preheat your air fryer to 370°F (188°C) for about 3 minutes.
- Cook the egg rolls: Spray the egg rolls lightly with cooking spray and place them in the air fryer basket in a single layer. Air fry for 8-10 minutes, turning them halfway through, until they are golden brown and crispy.
- Serve: Serve with salsa, guacamole, or your favorite dipping sauce.
