Air Fryer Scotch Eggs

🧾 Ingredients:
- 4 large eggs, hard-boiled and peeled
- 1 egg, beaten (for coating)
- 1 lb (450g) ground sausage or chicken sausage
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 cup breadcrumbs (Panko or regular)
- 1/4 cup flour (for coating)
- Cooking spray or olive oil spray

Instructions:
- Preheat air fryer to 375°F (190°C) for 5 minutes.
- Prepare sausage mix:
In a bowl, combine ground sausage with salt, pepper, garlic powder, and paprika. Mix until well combined. - Wrap eggs:
Divide the sausage mixture into 4 portions. Flatten each portion into a thin patty. Wrap around each hard-boiled egg completely, sealing all edges. - Coat eggs:
- Roll each sausage-wrapped egg in flour.
- Dip into beaten egg.
- Roll in breadcrumbs until fully coated.
- Air fry:
- Lightly spray each egg with cooking spray.
- Place in air fryer basket (in a single layer).
- Cook at 375°F (190°C) for 12–15 minutes, flipping halfway through, until golden brown and fully cooked.
- Serve:
Let cool slightly. Serve warm with mustard, aioli, or dipping sauce of choice.
