Air Fryer Monterey Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup barbecue sauce
  • 4 slices of cooked bacon
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions (optional)
  • Cooking spray

Instructions:

  1. Preheat your air fryer to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Place the chicken breasts in the preheated air fryer basket, making sure they are not touching. You may need to cook them in batches depending on the size of your air fryer.
  4. Cook the chicken in the air fryer for about 18-20 minutes, flipping them halfway through, until they reach an internal temperature of 165°F (74°C) and are golden brown and crispy on the outside.
  5. Once the chicken is cooked, remove it from the air fryer and place it on a plate.
  6. Brush each chicken breast with barbecue sauce.
  7. Top each chicken breast with a slice of cooked bacon.
  8. Sprinkle shredded Monterey Jack cheese on top of the bacon.
  9. Place the assembled chicken breasts back in the air fryer and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
  10. Carefully remove the chicken from the air fryer and let it rest for a minute.
  11. Garnish with diced tomatoes and sliced green onions, if desired.
  12. Serve the Air Fryer Monterey Chicken hot and enjoy!
