Air fryer meatloaf

Ingredients:

  • 1 lb (450g) ground beef (80/20 for juiciness)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/4 cup ketchup (for topping)
  • 1 tbsp brown sugar (for topping, optional)

Instructions:

  1. Prepare the Meatloaf Mix:
    • In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined; avoid overmixing to keep the meatloaf tender.
  2. Shape the Meatloaf:
    • Form the mixture into a loaf shape that fits your air fryer basket or tray. Place it on a piece of parchment paper for easy transfer and cleanup.
  3. Preheat the Air Fryer:
    • Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  4. Cook the Meatloaf:
    • Place the meatloaf in the air fryer basket or tray. Cook at 375°F (190°C) for 20 minutes.
  5. Add the Topping:
    • While the meatloaf cooks, mix the topping by combining ketchup and brown sugar. After 20 minutes, spread the topping evenly over the meatloaf.
  6. Finish Cooking:
    • Return the meatloaf to the air fryer and cook for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Rest and Serve:
    • Let the meatloaf rest for 5 minutes before slicing. Serve with your favorite sides like mashed potatoes or roasted vegetables.
