Air Fryer Mashed Potato Jalapeño Bites

Ingredients:

For the Mashed Potatoes:

  • 2 cups of mashed potatoes (prepared in advance)
  • 1/4 cup of shredded cheddar cheese
  • 1/4 cup of grated Parmesan cheese
  • 2-3 fresh jalapeño peppers, finely chopped (adjust to your desired level of spiciness)
  • 2 cloves of garlic, minced
  • Salt and black pepper to taste
  • 1/2 teaspoon of paprika (optional)

For Coating and Breading:

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko)
  • Cooking spray

Instructions:

  1. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, chopped jalapeños, minced garlic, salt, black pepper, and paprika (if using). Mix well until all the ingredients are evenly distributed.
  2. Take small portions of the mashed potato mixture and shape them into bite-sized balls or small patties.
  3. Set up a breading station with three bowls: one containing the all-purpose flour, one with the beaten eggs, and the third with breadcrumbs.
  4. Roll each mashed potato bite in the flour, dip it into the beaten eggs, and then coat it with breadcrumbs. Ensure that they are evenly coated.
  5. Preheat your air fryer to 375°F (190°C).
  6. Place the coated mashed potato jalapeño bites in a single layer in the air fryer basket. You may need to do this in batches, depending on the size of your air fryer.
  7. Lightly spray the bites with cooking spray to help them become crispy.
  8. Cook the bites in the air fryer for about 10-12 minutes or until they are golden brown and crispy. Be sure to flip them or shake the basket halfway through to ensure even cooking.
  9. Once done, remove the bites from the air fryer and let them cool for a couple of minutes.
  10. Serve the Air Fryer Mashed Potato Jalapeño Bites with your favorite dipping sauce, such as ranch dressing or sour cream. Enjoy!…
