1 lb pork (or a mix of pork and veal), cut into 1-inch cubes
Wooden skewers (soaked in water for 30 minutes)
1 cup almond flour or crushed pork rinds
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
2 eggs, beaten
Olive oil spray
Instructions:
Prepare the Skewers: Thread the pork cubes onto the soaked wooden skewers, about 4-5 cubes per skewer.
Prepare the Breading: In a shallow bowl, mix the almond flour (or crushed pork rinds), Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
Egg Wash: In another bowl, beat the eggs.
Coat the Meat: Dip each skewer in the egg wash, then roll it in the breading mixture, pressing to coat the meat well.
Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C).
Air Fry the Skewers: Lightly spray the air fryer basket with olive oil spray. Place the skewers in the basket in a single layer without overcrowding. Spray the tops of the skewers lightly with olive oil.
Cook: Air fry the skewers for 10-12 minutes, flipping halfway through, until the breading is golden brown and the pork is cooked through (internal temperature of 145°F or 63°C).
Serve: Serve warm with your favorite low-carb dipping sauce or side salad.
