Air Fryer Greek Spanakopita
Ingredients:
300g (10 oz) frozen and thawed spinach
300g (10 oz) crumbled vegan feta cheese
120g (4 oz) dairy-free vegan goat cheese
1/2 cup melted dairy-free vegan butter
1 package of vegan phyllo dough
2 flax eggs (2 tbsp ground flaxseed mixed with 6 tbsp water)
1/2 tsp ground black pepper
Instructions:
Preheat your air fryer to 350°F (175°C).
If using frozen spinach, make sure it’s thoroughly thawed and drained. If using fresh spinach, cook it until wilted and then squeeze out any excess moisture.
In a mixing bowl, combine the thawed spinach, vegan feta cheese, vegan goat cheese, flax eggs, and ground black pepper. Mix until everything is well combined.
Lay out a sheet of vegan phyllo dough and brush it lightly with melted vegan butter. Place another sheet on top and repeat the process until you have 4-5 layers of phyllo dough.
Spread a portion of the spinach and cheese mixture over the layered phyllo dough.
Continue layering phyllo dough and spinach mixture, making sure to brush each sheet of phyllo with melted vegan butter.
Finish with a final layer of phyllo dough, again brushing it with melted vegan butter. Cut the Spanakopita into squares or triangles, making sure to cut through all the layers.
Place the Spanakopita in the preheated air fryer. You may need to cook it in batches depending on the size of your air fryer. Air fry at 350°F (175°C) for about 10-12 minutes, or until the pastry is golden brown and crispy.
Remove the air-fried Spanakopita and let it cool slightly before serving.
Enjoy your air fryer Spanakopita warm or cold, cut into pieces.
