Air Fryer Greek Chicken Gyros by Tracy

Ingredients
For the Chicken:
- 1 lb boneless, skinless chicken thighs or breasts, cut into strips
- 2 tbsp olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 tbsp Greek yogurt (optional for extra tenderness)
- 1 tsp dried oregano
- ½ tsp ground cumin
- ½ tsp smoked paprika
- Salt & pepper to taste
For Assembly:
- Pita bread or flatbreads
- Tzatziki sauce (store-bought or homemade)
- Sliced cucumber
- Chopped tomato
- Red onion, thinly sliced
- Crumbled feta cheese (optional)
- Fresh parsley or dill for garnish

Instructions
- Marinate the Chicken:
- In a bowl, mix olive oil, lemon juice, garlic, yogurt, and seasonings.
- Add chicken and toss to coat well.
- Marinate for at least 30 minutes (or overnight for deeper flavor).
- Air Fry the Chicken:
- Preheat air fryer to 375°F (190°C).
- Place marinated chicken in the basket in a single layer.
- Cook for 10–12 minutes, shaking halfway through, until golden and cooked through (internal temp 165°F/74°C).
- Assemble the Gyros:
- Warm pita bread in the air fryer for 1–2 minutes if desired.
- Spread tzatziki, layer on the chicken, cucumbers, tomatoes, onion, feta, and herbs.
- Fold or roll and enjoy!
