Air Fryer Diced Potatoes by Tracy

Ingredients:
- 3 medium potatoes (Russet or Yukon Gold), diced into ½-inch cubes
- 1 ½ tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon dried parsley (optional)
- Salt and pepper to taste

Instructions:
- Prep the Potatoes:
Wash and dice the potatoes into even-sized cubes (about ½ inch for even cooking). - Soak (Optional but recommended):
Soak diced potatoes in cold water for 15–20 minutes to remove excess starch for extra crispiness. Drain and pat dry. - Season:
In a large bowl, toss potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper. - Air Fry:
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- Place the diced potatoes in the air fryer basket in a single layer (cook in batches if needed).
- Air fry for 15–20 minutes, shaking the basket halfway through, until golden and crispy.
- Serve:
Sprinkle with fresh parsley or a dash of parmesan if desired. Serve hot!
