Air Fryer Diced Potatoes by Tracy

Ingredients:

  • 3 medium potatoes (Russet or Yukon Gold), diced into ½-inch cubes
  • 1 ½ tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley (optional)
  • Salt and pepper to taste

Instructions:

  1. Prep the Potatoes:
    Wash and dice the potatoes into even-sized cubes (about ½ inch for even cooking).
  2. Soak (Optional but recommended):
    Soak diced potatoes in cold water for 15–20 minutes to remove excess starch for extra crispiness. Drain and pat dry.
  3. Season:
    In a large bowl, toss potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper.
  4. Air Fry:
    • Preheat air fryer to 400°F (200°C) for 3 minutes.
    • Place the diced potatoes in the air fryer basket in a single layer (cook in batches if needed).
    • Air fry for 15–20 minutes, shaking the basket halfway through, until golden and crispy.
  5. Serve:
    Sprinkle with fresh parsley or a dash of parmesan if desired. Serve hot!
