Air Fryer Crispy Zucchini
Ingredients:
- 2 medium zucchinis
- 1/2 cup breadcrumbs (you can use panko breadcrumbs for extra crispiness)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Cooking spray (olive oil or non-stick spray)
Instructions:
- Preheat your air fryer to 400°F (200°C).
- Wash the zucchinis and cut them into slices or sticks, depending on your preference. Make sure the pieces are of a uniform size to ensure even cooking.
- In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well to create the coating mixture.
- Lightly spray the zucchini pieces with cooking spray. This will help the breadcrumb mixture stick to the zucchini and promote crispiness.
- Dip each zucchini piece into the breadcrumb mixture, making sure to coat them evenly. Press the breadcrumbs onto the zucchini for better adherence.
- Place the coated zucchini in a single layer in the air fryer basket, ensuring they’re not overcrowded. You may need to cook them in batches.
- Lightly spray the zucchini in the air fryer basket with cooking spray to help them crisp up.
- Cook the zucchini in the preheated air fryer at 400°F (200°C) for about 10-12 minutes, or until they are golden brown and crispy. You may want to flip or shake the basket halfway through the cooking time for even browning.
- Once they are done, remove the crispy zucchini from the air fryer and serve immediately.
