Air Fryer Cheesy Potato Bites

Ingredients (makes ~20 bites)

2 cups mashed potatoes (cold works best)

1 cup shredded cheese (cheddar, mozzarella, or Colby-Jack)

1 egg

¼ cup breadcrumbs or panko

2 tbsp grated Parmesan (optional, for extra crisp)

1 tbsp melted butter or olive oil

½ tsp salt

½ tsp black pepper

½ tsp garlic powder

Optional add-ins: cooked bacon bits, green onions, paprika

Instructions

Mix

In a bowl, combine mashed potatoes, cheese, egg, breadcrumbs, butter, and seasonings.

Mix until well combined.

Shape

Scoop tablespoon-sized portions and roll into balls or flatten slightly into nuggets.

Prep air fryer

Preheat air fryer to 375°F (190°C).

Lightly spray basket or line with perforated parchment.

Air fry

Arrange bites in a single layer.

Cook 8–10 minutes, shaking or flipping halfway, until golden and crispy.

Serve hot

Let cool slightly so the cheese sets.
