Air Fryer Bell Pepper Boats

Ingredients:
- 2 large bell peppers (any color), halved and seeds removed
- 1 cup cooked ground meat (beef, turkey, chicken, or plant-based)
- 1/2 cup cooked rice or cauliflower rice (optional for low-carb)
- 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/4 cup diced tomatoes (drained)
- 1/4 cup diced onions
- 1 clove garlic, minced
- 1/2 tsp Italian seasoning or taco seasoning (depending on flavor preference)
- Salt & pepper to taste
- Olive oil spray
- Optional toppings: sour cream, green onions, salsa, avocado

Instructions:
- Preheat Air Fryer:
Set to 375°F (190°C) and preheat for 3-5 minutes. - Prepare the Filling:
In a skillet, cook ground meat with onions and garlic until browned. Drain any fat. Add tomatoes, rice (if using), seasoning, salt, and pepper. Mix well and let it cool slightly. - Assemble Bell Pepper Boats:
Spray the pepper halves lightly with olive oil. Stuff each half with the prepared filling, pressing down slightly. Top with shredded cheese. - Air Fry:
Place stuffed pepper halves in the air fryer basket (work in batches if needed). Cook at 375°F (190°C) for 10–12 minutes, or until peppers are tender and cheese is melted and bubbly. - Serve:
Garnish with optional toppings and serve warm.
