Air Fryer Bell Pepper Boats

Ingredients:

  • 2 large bell peppers (any color), halved and seeds removed
  • 1 cup cooked ground meat (beef, turkey, chicken, or plant-based)
  • 1/2 cup cooked rice or cauliflower rice (optional for low-carb)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/4 cup diced tomatoes (drained)
  • 1/4 cup diced onions
  • 1 clove garlic, minced
  • 1/2 tsp Italian seasoning or taco seasoning (depending on flavor preference)
  • Salt & pepper to taste
  • Olive oil spray
  • Optional toppings: sour cream, green onions, salsa, avocado

Instructions:

  1. Preheat Air Fryer:
    Set to 375°F (190°C) and preheat for 3-5 minutes.
  2. Prepare the Filling:
    In a skillet, cook ground meat with onions and garlic until browned. Drain any fat. Add tomatoes, rice (if using), seasoning, salt, and pepper. Mix well and let it cool slightly.
  3. Assemble Bell Pepper Boats:
    Spray the pepper halves lightly with olive oil. Stuff each half with the prepared filling, pressing down slightly. Top with shredded cheese.
  4. Air Fry:
    Place stuffed pepper halves in the air fryer basket (work in batches if needed). Cook at 375°F (190°C) for 10–12 minutes, or until peppers are tender and cheese is melted and bubbly.
  5. Serve:
    Garnish with optional toppings and serve warm.
