Air Fryer Baked Fajitas are a quick, healthy, and delicious meal that’s perfect for busy weeknights or meal prep. To make them, start by slicing 1 pound of boneless, skinless chicken breast into thin strips, along with two bell peppers (any color) and one red onion. Toss everything in a tablespoon of olive oil—or spray lightly with zero-calorie cooking spray for a lower-point option—and season well with fajita seasoning. You can use a store-bought blend or make your own by mixing chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.

Preheat your air fryer to 375°F (190°C). Add the chicken and vegetable mixture to the air fryer basket. Depending on the size of your air fryer, you may need to cook in batches to avoid overcrowding. Air fry for 12 to 15 minutes, shaking the basket halfway through, until the chicken is fully cooked and the vegetables are slightly charred but still crisp-tender.

Once cooked, serve the fajitas in warm, low-point tortillas, or make a lighter version by serving them over a bed of lettuce as a fajita bowl. Add optional toppings like a dollop of nonfat Greek yogurt in place of sour cream, fresh salsa, a squeeze of lime, chopped cilantro, or even a few slices of avocado if it fits your plan. These air fryer fajitas are flavorful, satisfying, and can easily be adapted to suit a Weight Watchers-friendly lifestyle. Each serving is packed with lean protein and colorful veggies, making it a smart and tasty choice.

💡 WW-Friendly Tips:

  • Use 0-calorie cooking spray instead of oil to reduce points.
  • Choose low-point tortillas or serve over lettuce as a fajita bowl.
  • Chicken breast and most spices are zero points on many WW plans.
