Air Fryer Apricot Chicken with Crispy Potatoes

Ingredients:
8 chicken drumsticks
4 medium potatoes, peeled and cut into chunks
1 cup baby carrots
4 mushrooms, sliced
1 packet French onion soup mix
2 cups baby spinach leaves
Steamed greens (such as broccoli or green beans), for serving
1 cup dried apricots, halved if desired
Instructions:
Prepare the Chicken and Potatoes:
In a large mixing bowl, combine the chicken drumsticks, potato chunks, baby carrots, and sliced mushrooms.
Season with French Onion Soup Mix:
Sprinkle the French onion soup mix evenly over the chicken and vegetable mixture. Toss to ensure everything is coated evenly with the mix.
Preheat the Air Fryer:
Preheat your air fryer to 380°F (193°C).
Air Fry the Chicken and Potatoes:
Place the seasoned chicken and vegetables in the air fryer basket in a single layer. You may need to cook in batches if your air fryer is small.
Cook for 20-25 minutes, or until the chicken is cooked through and the potatoes are crispy and golden. You may want to shake or toss the ingredients halfway through to ensure even cooking.
Add Apricots:
In the last 5 minutes of cooking, add the dried apricots to the air fryer. This will allow them to warm and slightly caramelize.
Wilt the Spinach:
Once the chicken and vegetables are done, transfer them to a serving dish. Gently stir in the baby spinach leaves to wilt them slightly from the residual heat.
Serve:
Serve the Air Fryer Apricot Chicken with the wilted baby spinach and steamed greens (broccoli or green beans) on the side.
