Air fry zucchini bites

Ingredients:

  • 2 medium zucchinis
  • 1 cup breadcrumbs (panko or regular)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 large eggs
  • Olive oil spray

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C).
  2. Prepare the Zucchini: Wash the zucchinis and cut them into bite-sized pieces (about 1/2-inch thick rounds or sticks).
  3. Set Up Breading Stations:
    • In one bowl, beat the eggs.
    • In another bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. Bread the Zucchini:
    • Dip each zucchini piece into the beaten eggs, allowing any excess to drip off.
    • Then, coat the zucchini in the breadcrumb mixture, pressing lightly to ensure the breadcrumbs stick.
  5. Air Fry the Zucchini:
    • Place the breaded zucchini pieces in a single layer in the air fryer basket. Be careful not to overcrowd them; you may need to cook them in batches.
    • Lightly spray the zucchini with olive oil spray to help them crisp up.
  6. Cook: Air fry the zucchini at 400°F (200°C) for about 10-12 minutes, turning them halfway through, until they are golden brown and crispy.
  7. Serve: Remove the zucchini bites from the air fryer and serve them immediately with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
