Air fry zucchini bites
Ingredients:
- 2 medium zucchinis
- 1 cup breadcrumbs (panko or regular)
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 large eggs
- Olive oil spray
Instructions:
- Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C).
- Prepare the Zucchini: Wash the zucchinis and cut them into bite-sized pieces (about 1/2-inch thick rounds or sticks).
- Set Up Breading Stations:
- In one bowl, beat the eggs.
- In another bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Bread the Zucchini:
- Dip each zucchini piece into the beaten eggs, allowing any excess to drip off.
- Then, coat the zucchini in the breadcrumb mixture, pressing lightly to ensure the breadcrumbs stick.
- Air Fry the Zucchini:
- Place the breaded zucchini pieces in a single layer in the air fryer basket. Be careful not to overcrowd them; you may need to cook them in batches.
- Lightly spray the zucchini with olive oil spray to help them crisp up.
- Cook: Air fry the zucchini at 400°F (200°C) for about 10-12 minutes, turning them halfway through, until they are golden brown and crispy.
- Serve: Remove the zucchini bites from the air fryer and serve them immediately with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
