Cheesy Onion Scalloped Potatoes

These incredibly easy  Cheesy Onion Scalloped Potatoes require only 4 ingredients and minimal prep work! Thinly sliced potatoes are baked in a rich, savory onion cream sauce and topped with melted cheese for the ultimate comfort food side dish.

Ingredients

  • 2 pounds russet or Yukon Gold potatoes thinly sliced
  • 1 packet onion  soup mix
  • 1 cup heavy cream
  • 1 ½ cups shredded mozzarella or Swiss cheese

Instructions 

  • Preheat & Prep: Preheat oven to 375°F (190°C). Grease a medium baking dish.
  • Layer Potatoes: Layer the thinly sliced potatoes evenly in the prepared baking dish.
  • Mix Sauce: In a bowl, whisk together the heavy cream and onion soup mix. Pour evenly over the potatoes.
  • Add Cheese: Sprinkle the shredded cheese evenly over the top of the potato and cream mixture.Dairy & Eggs
  • First Bake (Covered): Cover the baking dish tightly with foil and bake for 45 minutes.
  • Second Bake (Uncovered): Remove foil and continue baking for 20-25 minutes, until the potatoes are tender and the top is golden and bubbly.
  • Rest & Serve: Let the casserole rest for 5 minutes before serving to allow the creamy sauce to set up.

Notes

Pro-Tip: For the absolute best cheese melt, always grate your mozzarella or Swiss cheese fresh from a block. Pre-shredded cheeses in bags are coated with anti-caking powders (like cellulose) that can prevent them from melting smoothly and can cause a grainy texture on top of your beautiful casserole!
