Method
- Peel and chop the potatoes, then boil them in salted water until tender, about 15-20 minutes. Drain and let them cool slightly before mashing into a smooth consistency.
- In a bowl, whisk together 2 cups of all-purpose flour, baking powder, and salt until evenly combined.
- In another bowl, blend the softened butter with the cooled mashed potatoes until smooth.
- Pour in the milk and beaten egg, mixing thoroughly until you have a creamy batter. If using chives, gently fold them into the mixture now.
- Gradually add the dry mixture to the wet one, stirring until a soft, non-sticky dough forms.
- Turn your dough onto a floured surface and knead it gently for about a minute.
- Pat the dough into a circle about ½ inch thick. Use a knife to cut it into wedges or a round cutter for perfect rounds.
- Heat a skillet over medium heat and grease it lightly. Cook each piece for 5-7 minutes on one side until golden, then flip and cook for another 5-7 minutes.
- Remove the bread from the skillet and let it cool slightly on a wire rack. Enjoy it warm or at room temperature as a treat!
