Irresistibly Fluffy Irish Potato Bread for Cozy Nights

Ingredients 

  • 2 cups mashed potatoes about 2 large potatoes
  • 2 cups all-purpose flour plus extra for dusting
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup butter softened
  • ½ cup milk
  • 1 large egg
  • 1 tbsp chopped fresh chives optional
  • extra flour for dusting

Method 

  1. Peel and chop the potatoes, then boil them in salted water until tender, about 15-20 minutes. Drain and let them cool slightly before mashing into a smooth consistency.
  2. In a bowl, whisk together 2 cups of all-purpose flour, baking powder, and salt until evenly combined.
  3. In another bowl, blend the softened butter with the cooled mashed potatoes until smooth.
  4. Pour in the milk and beaten egg, mixing thoroughly until you have a creamy batter. If using chives, gently fold them into the mixture now.
  5. Gradually add the dry mixture to the wet one, stirring until a soft, non-sticky dough forms.
  6. Turn your dough onto a floured surface and knead it gently for about a minute.
  7. Pat the dough into a circle about ½ inch thick. Use a knife to cut it into wedges or a round cutter for perfect rounds.
  8. Heat a skillet over medium heat and grease it lightly. Cook each piece for 5-7 minutes on one side until golden, then flip and cook for another 5-7 minutes.
  9. Remove the bread from the skillet and let it cool slightly on a wire rack. Enjoy it warm or at room temperature as a treat!
