Mexican White Trash Casserole

Ingredients

  • 1 lb 99% lean ground turkey or chicken
  • 1 packet taco seasoning (low-sodium or homemade)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (10 oz) Rotel tomatoes with green chiles
  • 1 cup fat-free Greek  yogurt
  • 1 cup fat-free cottage  cheese
  • 1 cup fat-free shredded cheddar or Mexican-blend cheese
  • 1 cup frozen corn (optional)
  • 3 cups crushed baked tortilla chips OR 2 cups cooked brown  rice
  • Cooking spray

 Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown turkey in a skillet, drain if needed. Add taco seasoning and a splash of water.
  3. Stir in beans, Rotel, corn, Greek yogurt, and cottage cheese.
  4. Lightly spray a baking dish. Add crushed chips (or rice) as the base.
  5. Spread meat mixture over top.
  6. Sprinkle cheese evenly.
  7. Bake 25–30 minutes until bubbly and lightly golden.
