Ingredients
1 cup rolled oats
2 large eggs
¼ cup nonfat Greek yogurt
½ cup unsweetened almond milk
1 small banana, mashed
1 apple, finely chopped
2 tbsp prunes, chopped
1 tbsp raisins
1 tbsp dried cranberries
1 tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
Instructions
Preheat oven to 180°C / 350°F.
Lightly spray or line an 8×8-inch baking dish.
In a bowl, whisk eggs, yogurt, almond milk, banana, and vanilla.
Stir in oats, baking powder, and cinnamon.
Fold in apple, prunes, raisins, and cranberries.
Spread batter into prepared pan.
Bake for 25–30 minutes until set and lightly golden.
Cool before slicing into 12 squares.
