Classic English Eton Mess

Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and halved (or other berries)
  • Optional: additional berries for garnish

Directions

  1. Prepare the Meringue:
    • Preheat your oven to 250°F (120°C).
    • Line a baking sheet with parchment paper and set aside.
    • In a clean mixing bowl, beat the egg whites on medium speed until soft peaks form.
    • Gradually add the granulated sugar, a tablespoon at a time, while continuing to beat the egg whites on high speed until stiff, glossy peaks form.
  2. Bake the Meringue:
    • Spoon the meringue mixture onto the prepared baking sheet, forming small, rough circles or dollops.
    • Bake in the preheated oven for about 1 hour, or until the meringues are crisp and can be easily lifted off the parchment paper.
    • Turn off the oven and leave the meringues inside to cool completely.
  3. Prepare the Whipped Cream:
    • In a large mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
    • Be careful not to overwhip; the cream should be light and airy.
  4. Assemble the Eton Mess:
    • Gently crush the cooled meringues into bite-sized pieces.
    • In serving glasses or bowls, layer the meringue pieces, whipped cream, and strawberries.
    • Repeat the layers until you reach the top of the glass or bowl.
    • Garnish with additional berries if desired.
  5. Serve and Enjoy:
    • Serve the Eton Mess immediately, or refrigerate for up to 2 hours before serving.
