- 4 salmon fillets (about 6 oz each)
- Salt & black pepper
- 1 tsp paprika
- 2 tbsp butter (or half butter, half olive oil)
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- ¾ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tbsp lemon juice
- Optional: 1 tbsp fresh parsley

- Season salmon
Pat dry. Season with salt, pepper, and paprika. - Sear salmon
Heat 1 tbsp butter in skillet over medium heat.
Cook salmon 4–5 minutes per side until golden.
Remove and set aside. - Sauté vegetables
Add remaining butter.
Cook mushrooms 3–4 minutes until soft.
Add garlic and cook 30 seconds.
Stir in spinach until wilted. - Make creamy sauce
Pour in heavy cream. Simmer 3–4 minutes.
Stir in Parmesan and lemon juice.
Let sauce thicken naturally (no flour needed). - Return salmon
Place salmon back into skillet.
Spoon sauce over top. Simmer 2–3 minutes. - Garnish with parsley and serve.
