- 1 cup fresh orange juice (preferably freshly squeezed)
- 1 tbsp orange zest
- 3β4 tbsp powdered erythritol or monk fruit (adjust to taste)
- 3 tbsp unflavored gelatin
- 2 tbsp water (to bloom gelatin)
- Β½ tsp lemon juice
- Optional: natural orange food coloring
- Extra powdered erythritol (for coating)

- Bloom gelatin
- Sprinkle gelatin over 2 tbsp water. Let sit 5 minutes.
- Heat juice mixture
- In a saucepan, warm orange juice, zest, lemon juice, and sweetener.
- Do NOT boil β just heat until sweetener dissolves.
- Add gelatin
- Stir bloomed gelatin into warm mixture.
- Stir until completely dissolved.
- Pour & set
- Pour into a parchment-lined small dish.
- Refrigerate 2β3 hours until firm.
- Slice & coat
- Cut into wedges.
- Lightly coat in powdered erythritol if desired.
