Sugar-Free Creamy Milk Pudding (Diabetic-Friendly)

🧾 Ingredients
- 2 cups unsweetened almond milk (or low-fat milk if preferred)
- 1 cup heavy cream (or coconut cream for dairy-free)
- 3 tbsp erythritol or monk fruit sweetener (adjust to taste)
- 2 tbsp cornstarch
(For stricter low-carb: replace with 1 tsp xanthan gum OR 1½ tsp agar-agar)
- 1 tsp vanilla extract
- Optional: sugar-free chocolate sprinkles for topping
👩🍳 Instructions
- Mix dry ingredients
In a saucepan, whisk sweetener and cornstarch (or chosen thickener).
- Add liquids
Slowly whisk in almond milk and cream until smooth.
- Cook
Heat on medium, stirring constantly.
Cook until thick and creamy (about 5–7 minutes).
It should coat the back of a spoon.
- Add vanilla
Turn off heat and stir in vanilla.
- Set
Pour into a glass dish. Let cool, then refrigerate for 2–3 hours until firm.
- Serve
Top with sugar-free chocolate shavings or a sprinkle of cinnamon.
