🥣 Ingredients (Makes 8–10 patties)
- 1 cup grated zucchini (squeeze out excess water)
- ½ cup grated carrot (moderate amount for lower carbs)
- 2 tbsp chopped green onions
- ½ cup shredded mozzarella or cheddar
- 2 large eggs
- 3 tbsp almond flour
- 1 tbsp ground flaxseed (optional, for extra fiber)
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 1–2 tbsp olive oil (for pan frying)

- Prep zucchini properly:
After grating, squeeze in a clean towel to remove moisture (very important for crispiness).
- Mix ingredients:
Combine zucchini, carrot, green onions, cheese, eggs, almond flour, flaxseed, and seasonings.
- Form patties:
Shape into small oval or round patties.
- Cook:
Heat olive oil over medium heat. Cook 3–4 minutes per side until golden brown and firm.
- Cool slightly before serving so they set properly.
