  • 1 cup grated zucchini (squeeze out excess water)

  • ½ cup shredded mozzarella or cheddar
  • 2 large eggs
  • 3 tbsp almond flour
  • 1 tbsp ground flaxseed (optional, for extra fiber)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 1–2 tbsp olive oil (for pan frying)

  1. Prep zucchini properly:
    After grating, squeeze in a clean towel to remove moisture (very important for crispiness).
  2. Mix ingredients:
    Combine zucchini, carrot, green onions, cheese, eggs, almond flour, flaxseed, and seasonings.
  3. Form patties:
    Shape into small oval or round patties.
  4. Cook:
    Heat olive oil over medium heat. Cook 3–4 minutes per side until golden brown and firm.
  5. Cool slightly before serving so they set properly.
