🧾 Ingredients (Makes 12 pinwheels)
Low-Carb Dough:
- 1 ½ cups shredded mozzarella
- 2 tbsp cream cheese
- ¾ cup almond flour
- 1 egg
Filling:
- 6–8 slices thin deli ham (low-sodium, no added sugar)
- ½ cup shredded Swiss or cheddar cheese
- ½ tsp Dijon mustard (no sugar added)
- Optional: sprinkle of dried Italian seasoning
👩🍳 Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Make the dough (Fathead-style):
- Melt mozzarella and cream cheese together (microwave 60–90 seconds, stirring halfway).
- Stir in almond flour and egg until a dough forms.
- Roll out dough between two sheets of parchment into a rectangle (about ¼-inch thick).
- Add filling:
- Spread mustard lightly.
- Layer ham and sprinkle cheese evenly.
- Roll tightly into a log and slice into 12 pieces.
- Bake 15–18 minutes until golden brown. Cool slightly before serving.
