Diabetic-Friendly Ham & Cheese Pinwheels

🧾 Ingredients (Makes 12 pinwheels)

Low-Carb Dough:

  • 1 ½ cups shredded mozzarella
  • 2 tbsp cream cheese
  • ¾ cup almond flour
  • 1 egg

Filling:

  • 6–8 slices thin deli ham (low-sodium, no added sugar)
  • ½ cup shredded Swiss or cheddar cheese
  • ½ tsp Dijon mustard (no sugar added)
  • Optional: sprinkle of dried Italian seasoning

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the dough (Fathead-style):
    • Melt mozzarella and cream cheese together (microwave 60–90 seconds, stirring halfway).
    • Stir in almond flour and egg until a dough forms.
  3. Roll out dough between two sheets of parchment into a rectangle (about ¼-inch thick).
  4. Add filling:
    • Spread mustard lightly.
    • Layer ham and sprinkle cheese evenly.
  5. Roll tightly into a log and slice into 12 pieces.
  6. Bake 15–18 minutes until golden brown. Cool slightly before serving.
