Greek Chicken Meatballs (Diabetic-Friendly)

🧾 Ingredients (Serves 4)

For the meatballs:

  • 1 lb ground chicken (lean)
  • ¼ cup almond flour (instead of breadcrumbs)
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 tsp dried oregano
  • ½ tsp ground cumin (optional)
  • ¼ cup finely chopped spinach
  • Salt & black pepper to taste

Optional Tzatziki Sauce:

  • ½ cup plain Greek yogurt
  • ¼ cup grated cucumber (squeezed dry)
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • Fresh dill (optional)
  • Pinch salt

👩‍🍳 Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix all meatball ingredients until combined (don’t overmix).
  3. Form into 16–18 small meatballs and place on baking sheet.
  4. Bake 18–22 minutes, until cooked through (internal temp 165°F / 74°C).
  5. Mix tzatziki ingredients in a small bowl and chill until ready to serve.
