Diabetic Cucumber & Tomato Salad
🧾 Ingredients (Serves 4)
- 2 cups chopped fresh tomatoes
- 2 cups sliced cucumber (English or regular, seeds removed if watery)
- ¼ cup thinly sliced red onion
- 1 tbsp olive oil
- 1–2 tbsp fresh lemon juice or red wine vinegar
- 1 tbsp chopped fresh parsley or dill
- Salt & black pepper to taste

- In a large bowl, combine tomatoes, cucumber, and red onion.
- In a small bowl, whisk olive oil, lemon juice (or vinegar), salt, and pepper.
- Pour dressing over vegetables and toss gently.
- Chill 20–30 minutes before serving for best flavor.
