Ingredients
1 cup (80g) unsweetened shredded coconut
ΒΎ cup (75g) vanilla or unflavored whey protein isolate
2 tbsp coconut flour (helps absorb moisture)
2 large egg whites
1 whole egg
ΒΌ cup (60g) Greek yogurt (plain, nonfat)
3β4 tbsp powdered sweetener (or maple syrup to taste)
1 tsp vanilla extract
Pinch of salt
Optional:
1β2 tbsp dark chocolate chips
Β½ tsp coconut extract (stronger flavor)
πΉ Instructions
Preheat oven to 350Β°F (175Β°C). Line a baking sheet with parchment.
In a bowl, mix shredded coconut, protein powder, coconut flour, and salt.
In another bowl, whisk egg whites, whole egg, yogurt, sweetener, and vanilla.
Combine wet and dry ingredients until thick and slightly sticky.
Scoop into 10β12 mounds and gently flatten (they wonβt spread much).
Bake 10β13 minutes until edges are lightly golden.
Cool 5β10 minutes to firm up.
