Ingredients

1 cup (80g) unsweetened shredded coconut

ΒΎ cup (75g) vanilla or unflavored whey protein isolate

2 tbsp coconut flour (helps absorb moisture)

2 large egg whites

1 whole egg

ΒΌ cup (60g) Greek yogurt (plain, nonfat)

3–4 tbsp powdered sweetener (or maple syrup to taste)

1 tsp vanilla extract

Pinch of salt

Optional:

1–2 tbsp dark chocolate chips

Β½ tsp coconut extract (stronger flavor)

Preheat oven to 350Β°F (175Β°C). Line a baking sheet with parchment.

In a bowl, mix shredded coconut, protein powder, coconut flour, and salt.

In another bowl, whisk egg whites, whole egg, yogurt, sweetener, and vanilla.

Combine wet and dry ingredients until thick and slightly sticky.

Scoop into 10–12 mounds and gently flatten (they won’t spread much).

Bake 10–13 minutes until edges are lightly golden.

Cool 5–10 minutes to firm up.
