Diabetic-Friendly “Chantal-Style” New York Cheesecake
🧾 Ingredients
🥧 Crust (Low-Carb)
- 1 ½ cups almond flour
- 3 tbsp melted butter
- 2 tbsp powdered erythritol or monk fruit
- Pinch of salt
🧀 Filling
- 3 (8 oz / 225g) blocks full-fat cream cheese (softened)
- ¾ cup powdered erythritol or monk fruit sweetener
- 3 large eggs (room temperature)
- 1 cup sour cream
- 1 tsp pure vanilla extract
- 1 tbsp lemon juice
- 2 tbsp heavy cream
👩🍳 Instructions
1️⃣ Make the Crust
- Preheat oven to 175°C (350°F).
- Mix almond flour, butter, sweetener, and salt.
- Press into bottom of 9-inch springform pan.
- Bake 8–10 minutes. Cool slightly.
2️⃣ Prepare Filling
- Beat cream cheese until smooth (don’t overmix).
- Add sweetener and mix gently.
- Add eggs one at a time on low speed.
- Mix in sour cream, vanilla, lemon juice, and heavy cream until just combined.
3️⃣ Bake
- Pour filling over crust.
- Bake at 165°C (325°F) for 55–65 minutes.
- Center should jiggle slightly.
- Turn off oven, crack door open, cool slowly 1 hour.
- Refrigerate at least 6 hours (overnight best).
