Diabetic-Friendly Soft Brioche Rolls (Low-Carb)
🧾 Ingredients
Dry Ingredients
- 1 ½ cups almond flour
- 2 tbsp coconut flour
- 1 tbsp psyllium husk powder (for elasticity)
- 2 tbsp erythritol or monk fruit sweetener
- 1 ½ tsp instant yeast
- ½ tsp salt
Wet Ingredients
- 3 large eggs (room temperature)
- ¼ cup warm unsweetened almond milk
- ¼ cup melted unsalted butter
- ½ tsp vanilla extract
👩🍳 Instructions
1️⃣ Activate Yeast
Mix warm almond milk, yeast, and a pinch of sweetener. Let sit 5–10 minutes until slightly foamy.
2️⃣ Mix Dough
- In a bowl, combine almond flour, coconut flour, psyllium, sweetener, and salt.
- Add eggs, melted butter, vanilla, and yeast mixture.
- Mix until a soft dough forms. Let rest 5 minutes to thicken.
3️⃣ Shape
- Divide into 6–8 balls.
- Place on lined baking tray or in muffin tin for round rolls.
- Cover and let rise in a warm place 30–45 minutes (they won’t double like regular brioche but will puff slightly).
4️⃣ Bake
- Preheat oven to 175°C (350°F).
- Brush tops with beaten egg for shine.
- Bake 18–22 minutes until golden brown.
Cool slightly before serving.
