Diabetic Stuffed Pepper Soup (Low-Carb)

๐Ÿ“ Ingredients (6 servings)

  • 1 lb lean ground beef (or ground turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (red & green), chopped
  • 3 cloves garlic, minced
  • 1 (14โ€“15 oz) can diced tomatoes (no sugar added)
  • 1 (8 oz) can tomato sauce (no sugar added)
  • 4 cups low-sodium beef broth
  • 1 cup cauliflower rice (instead of white rice)
  • 1 tsp Italian seasoning
  • ยฝ tsp paprika
  • Salt & black pepper to taste

Optional:

  • ยฝ cup shredded mozzarella for topping
  • Fresh parsley

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat if needed.
  3. Add onion, garlic, and peppers. Cook 4โ€“5 minutes until softened.
  4. Stir in diced tomatoes, tomato sauce, broth, and seasonings.
  5. Add cauliflower rice.
  6. Simmer 20โ€“25 minutes.
  7. Taste and adjust seasoning.
  8. Top with a little shredded cheese if desired.
