Diabetic Stuffed Pepper Soup (Low-Carb)
๐ Ingredients (6 servings)
- 1 lb lean ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 bell peppers (red & green), chopped
- 3 cloves garlic, minced
- 1 (14โ15 oz) can diced tomatoes (no sugar added)
- 1 (8 oz) can tomato sauce (no sugar added)
- 4 cups low-sodium beef broth
- 1 cup cauliflower rice (instead of white rice)
- 1 tsp Italian seasoning
- ยฝ tsp paprika
- Salt & black pepper to taste
Optional:
- ยฝ cup shredded mozzarella for topping
- Fresh parsley

- In a large pot, heat olive oil over medium heat.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Add onion, garlic, and peppers. Cook 4โ5 minutes until softened.
- Stir in diced tomatoes, tomato sauce, broth, and seasonings.
- Add cauliflower rice.
- Simmer 20โ25 minutes.
- Taste and adjust seasoning.
- Top with a little shredded cheese if desired.
