Diabetic-Friendly Million Dollar Pound Cake

- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 Β½ cups granular monk fruit sweetener (or erythritol blend)
- 4 large eggs
- 1 tsp vanilla extract
- 2 cups almond flour
- Β½ cup coconut flour
- 1 tsp baking powder
- ΒΌ tsp salt
- Β½ cup unsweetened almond milk

- Preheat oven to 325Β°F (163Β°C). Grease a loaf or bundt pan.
- In a large bowl, cream butter, cream cheese, and sweetener until light and fluffy (about 3β4 minutes).
- Add eggs one at a time, mixing well after each.
- Stir in vanilla extract.
- In a separate bowl, whisk together almond flour, coconut flour, baking powder, and salt.
- Gradually mix dry ingredients into the wet mixture.
- Add almond milk and mix until smooth.
- Pour batter into prepared pan and smooth the top.
- Bake for 55β70 minutes, or until a toothpick inserted comes out clean.
- Cool in pan 15 minutes, then transfer to a wire rack.

Mix:
- Β½ cup powdered monk fruit sweetener
- 1β2 tbsp heavy cream
- Β½ tsp vanilla
Drizzle once cake is completely cool.
