Diabetic Sugar-Free “Milk” Cloud Bread (Very Low Calorie)

🛒 Ingredients (Makes 6 pieces)

  • 3 large eggs (separated)
  • 3 tbsp powdered erythritol or monk fruit sweetener
  • 3 tbsp nonfat Greek yogurt (or light cream cheese)
  • ¼ tsp cream of tartar
  • ½ tsp vanilla extract
  • 1 tbsp unsweetened almond milk
  • Pinch salt

🥣 Instructions

1️⃣ Preheat

  • Oven to 300°F (150°C).
  • Line baking sheet with parchment paper.

2️⃣ Whip Egg Whites

  • Add cream of tartar to egg whites.
  • Beat until stiff peaks form.

3️⃣ Mix Yolks

  • In another bowl mix yolks, yogurt, sweetener, vanilla, almond milk, and salt until smooth.

4️⃣ Fold Gently

  • Carefully fold egg whites into yolk mixture.
  • Do NOT overmix (keeps it fluffy).

5️⃣ Bake

  • Spoon into 6 round mounds.
