🥣 Ingredients (Makes 6 muffins)
Muffin Base:
- ¾ cup cottage cheese
- 3 large eggs, separated
- 1 tbsp honey or sugar-free sweetener
- ½ tsp vanilla extract
- 2 tbsp oat flour (or almond flour)
- ½ tsp baking powder
- Pinch of salt
Cinnamon Swirl:
- 1 tbsp melted butter (or light butter)
- 1 tbsp brown sugar or brown monkfruit
- 1 tsp cinnamon
👩🍳 Instructions
1️⃣ Prep
- Preheat oven to 325°F (163°C).
- Line or lightly grease a muffin tin (silicone works best).
2️⃣ Blend the Base
- Add cottage cheese, egg yolks, honey, and vanilla to a blender.
- Blend until completely smooth.
3️⃣ Whip the Whites
- In a separate bowl, beat egg whites with salt until stiff peaks form.
(This is what makes them fluffy!)
4️⃣ Combine
- Gently fold whipped egg whites into the cottage cheese mixture in batches.
- Sprinkle in oat flour and baking powder and fold carefully to keep air in the batter.
5️⃣ Make the Swirl
- Mix melted butter, brown sugar, and cinnamon.
6️⃣ Assemble
- Spoon batter into muffin cups (about ¾ full).
- Drop small amounts of cinnamon mixture on top and use a toothpick to swirl.
7️⃣ Bake
- Bake 22–28 minutes until golden and set.
- Let cool in pan 10 minutes before removing.
