🥣 Ingredients (Makes 6 muffins)

Muffin Base:

  • ¾ cup cottage cheese
  • 3 large eggs, separated
  • 1 tbsp honey or sugar-free sweetener
  • ½ tsp vanilla extract
  • 2 tbsp oat flour (or almond flour)
  • ½ tsp baking powder
  • Pinch of salt

Cinnamon Swirl:

  • 1 tbsp melted butter (or light butter)
  • 1 tbsp brown sugar or brown monkfruit
  • 1 tsp cinnamon

👩‍🍳 Instructions

1️⃣ Prep

  • Preheat oven to 325°F (163°C).
  • Line or lightly grease a muffin tin (silicone works best).

2️⃣ Blend the Base

  • Add cottage cheese, egg yolks, honey, and vanilla to a blender.
  • Blend until completely smooth.

3️⃣ Whip the Whites

  • In a separate bowl, beat egg whites with salt until stiff peaks form.
    (This is what makes them fluffy!)

4️⃣ Combine

  • Gently fold whipped egg whites into the cottage cheese mixture in batches.
  • Sprinkle in oat flour and baking powder and fold carefully to keep air in the batter.

5️⃣ Make the Swirl

  • Mix melted butter, brown sugar, and cinnamon.

6️⃣ Assemble

  • Spoon batter into muffin cups (about ¾ full).
  • Drop small amounts of cinnamon mixture on top and use a toothpick to swirl.

7️⃣ Bake

  • Bake 22–28 minutes until golden and set.
  • Let cool in pan 10 minutes before removing.
