🫐 High-Protein Blueberry Cheesecake (Single Serve)

🥣 Ingredients

  • 3 tbsp cottage cheese
  • 2 oz cream cheese (softened)
  • 1 large egg
  • 2 tbsp sweetener (monkfruit or preferred sweetener)
  • 2 tbsp blueberries
  • 1 tsp vanilla extract

👩‍🍳 Instructions

1️⃣ Preheat oven to 325°F (163°C). Lightly grease a small ramekin or oven-safe dish.

2️⃣ Blend until smooth
Add cottage cheese, cream cheese, egg, sweetener, and vanilla to a blender or food processor. Blend until completely creamy and lump-free.

3️⃣ Add blueberries
Gently fold in blueberries (or pour half the batter, add berries, then cover with remaining batter for a layered look).

4️⃣ Bake
Pour into ramekin and bake for 20–25 minutes, until the center is just set but slightly jiggly.

5️⃣ Cool properly (important!)
Let cool at room temperature 15–20 minutes, then refrigerate at least 1 hour to fully set and get that true cheesecake texture.
