- 1Β½ cups low-fat cottage cheese
- 2 large eggs
- β cup maple syrup or honey (or sweetener of choice)
- 1 tsp vanilla extract
- Β½ cup unsweetened cocoa powder
- ΒΌ cup oat flour (or blended oats)
- 1 scoop (25β30g) chocolate or vanilla protein powder
- 1 tsp baking powder
- Pinch of salt
- ΒΌ cup dark chocolate chips (optional but recommended)

- Preheat oven to 350Β°F (175Β°C). Line or grease an 8-inch cake pan.
- Add cottage cheese, eggs, sweetener, and vanilla to a blender. Blend until completely smooth.
- Add cocoa powder, oat flour, protein powder, baking powder, and salt. Blend again until thick and smooth.
- Stir in chocolate chips.
- Pour into pan and smooth top.
- Bake 28β35 minutes until center is just set (slightly fudgy is perfect).
- Cool at least 20 minutes before slicing (it firms up as it cools).
