KETO TACO CASSEROLE

Keto Taco Casserole
Ingredients (Serves 6)
1½ lb ground beef (or ground turkey)

1 tbsp olive oil (if needed)

1 small onion, finely chopped (optional for lower carbs)

2 cloves garlic, minced

2 tbsp taco seasoning (keto-friendly)

½ cup sugar-free salsa or diced tomatoes

¼ cup water or beef broth

1 cup cauliflower rice (optional)

1½ cups shredded cheddar or Mexican-blend cheese

½ cup sour cream

4 oz cream cheese, softened

Salt & pepper to taste

Toppings (Optional)
Diced avocado

Sliced jalapeños

Chopped cilantro

Extra cheese

Instructions
Preheat oven:
Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.

Cook meat:
In a skillet over medium heat, cook ground beef with onion until browned. Drain excess grease.
Add garlic and taco seasoning; cook 30 seconds.

Simmer:
Stir in salsa, broth, and cauliflower rice (if using). Simmer 3–5 minutes.

Make creamy layer:
Mix sour cream and cream cheese until smooth.

Assemble casserole:
Spread meat mixture in dish. Dollop creamy mixture over top and swirl lightly.
Sprinkle cheese evenly.

Bake:
Bake 20–25 minutes until bubbly and cheese is melted.

Rest & serve:
Let rest 5 minutes before serving.

Serve over shredded lettuce for a taco-bowl feel
