Diabetic-Friendly Creamy Tuscan Shrimp

Ingredients

Shrimp

  • 1 lb (450 g) large shrimp, peeled & deveined
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil

Tuscan Cream Sauce

  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for lighter)
  • ½ cup chicken broth (low sodium)
  • ½ cup sun-dried tomatoes, chopped
    (no sugar added; oil-packed preferred)
  • 1 cup fresh spinach
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Optional: pinch red pepper flakes

Instructions

1. Season & Sear Shrimp

  1. Pat shrimp dry.
  2. Toss with salt, pepper, and paprika.
  3. Heat olive oil in a large skillet over medium heat.
  4. Sear shrimp 1–2 minutes per side until just pink.
  5. Remove shrimp and set aside.

2. Make the Sauce

  1. In the same skillet, add garlic and sauté 30 seconds.
  2. Pour in chicken broth; simmer 2 minutes.
  3. Stir in cream, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  4. Simmer 5–7 minutes until slightly thickened.

3. Finish

  1. Stir in spinach until wilted.
  2. Add Parmesan and whisk until smooth.
  3. Return shrimp to pan; simmer 2–3 minutes.
  4. Taste and adjust seasoning.
