Diabetic-Friendly Creamy Tuscan Shrimp

Ingredients
Shrimp
- 1 lb (450 g) large shrimp, peeled & deveined
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon olive oil
Tuscan Cream Sauce
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for lighter)
- ½ cup chicken broth (low sodium)
- ½ cup sun-dried tomatoes, chopped
(no sugar added; oil-packed preferred)
- 1 cup fresh spinach
- ¼ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- Optional: pinch red pepper flakes
Instructions
1. Season & Sear Shrimp
- Pat shrimp dry.
- Toss with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium heat.
- Sear shrimp 1–2 minutes per side until just pink.
- Remove shrimp and set aside.
2. Make the Sauce
- In the same skillet, add garlic and sauté 30 seconds.
- Pour in chicken broth; simmer 2 minutes.
- Stir in cream, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
- Simmer 5–7 minutes until slightly thickened.
3. Finish
- Stir in spinach until wilted.
- Add Parmesan and whisk until smooth.
- Return shrimp to pan; simmer 2–3 minutes.
- Taste and adjust seasoning.
