Diabetic-Friendly Salisbury Steak with Onion Gravy

Ingredients

Steaks

  • 500 g lean ground beef (90–95% lean works best)
  • ½ cup low-carb breadcrumbs or almond flour
    (or crushed pork rinds for zero carbs)
  • 1 large egg
  • 1 teaspoon Worcestershire sauce (no-sugar added if possible)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)

Onion Gravy

  • 1 medium onion, thinly sliced
  • 2 cups low-sodium beef broth
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional but great)
  • 1 teaspoon cornstarch + 2 tablespoons water
    OR ½ teaspoon xanthan gum for ultra-low carb
  • Salt to taste

Instructions

1. Make the Steaks

  1. In a large bowl, mix ground beef, breadcrumbs (or substitute), egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  2. Gently combine — don’t overmix.
  3. Shape into 4 oval patties.

2. Cook the Steaks

  1. Heat olive oil in a large skillet over medium heat.
  2. Cook patties for 4–5 minutes per side until browned.
  3. Remove from pan and set aside (they’ll finish cooking in the gravy).

3. Make the Onion Gravy

  1. In the same skillet, add sliced onions.
  2. Cook over medium-low heat for 8–10 minutes until soft and golden.
  3. Pour in beef broth, Worcestershire sauce, garlic powder, pepper, and thyme.
  4. Simmer for 3–5 minutes.

4. Thicken & Finish

  • Cornstarch option: Stir slurry in slowly and simmer until thickened.
  • Xanthan gum option: Sprinkle very lightly while whisking constantly.
  1. Return steaks to the skillet.
  2. Spoon gravy over them, cover, and simmer 10 minutes until fully cooked.
