Wet

  • 3 ripe bananas, mashed
  • 2 large eggs

  • ΒΌ cup melted butter or coconut oil
  • 1 tsp vanilla extract

Dry

  • 1Β½ cups oat flour
  • 1 scoop (25–30 g) vanilla or unflavored protein powder
  • 1 tsp baking soda
  • Β½ tsp salt
  • 1 tsp cinnamon

Optional (but great)

  • ΒΌ cup chocolate chips or chopped nuts
  • 1 extra egg white (extra protein + fluff)

  1. Preheat oven to 350Β°F / 175Β°C
    Line or grease a loaf pan.
  2. Mash & mix
    In one bowl, mash bananas.
    Add eggs, yogurt, honey, melted butter, and vanilla. Stir well.
  3. Add dry ingredients
    Add oat flour, protein powder, baking soda, salt, and cinnamon.
    Mix just until combined (don’t overmix).
  4. Pour & bake
    Pour into loaf pan.
    Bake 40–45 minutes, until golden and a toothpick comes out mostly clean.
  5. Cool slightly & enjoy
    Let rest 10 minutes β€” texture gets even better as it sets.
