π₯£ Ingredients
Wet
- 3 ripe bananas, mashed
- 2 large eggs
- Β½ cup Greek yogurt (plain, low-fat or non-fat)
- ΒΌ cup honey or maple syrup
- ΒΌ cup melted butter or coconut oil
- 1 tsp vanilla extract
Dry
- 1Β½ cups oat flour
- 1 scoop (25β30 g) vanilla or unflavored protein powder
- 1 tsp baking soda
- Β½ tsp salt
- 1 tsp cinnamon
Optional (but great)
- ΒΌ cup chocolate chips or chopped nuts
- 1 extra egg white (extra protein + fluff)
πͺ Instructions (One Bowl)
- Preheat oven to 350Β°F / 175Β°C
Line or grease a loaf pan. - Mash & mix
In one bowl, mash bananas.
Add eggs, yogurt, honey, melted butter, and vanilla. Stir well. - Add dry ingredients
Add oat flour, protein powder, baking soda, salt, and cinnamon.
Mix just until combined (donβt overmix). - Pour & bake
Pour into loaf pan.
Bake 40β45 minutes, until golden and a toothpick comes out mostly clean. - Cool slightly & enjoy
Let rest 10 minutes β texture gets even better as it sets.
