High-Protein Comfort Casserole

Serves 6


Ingredients

Base

  • 1 can reduced-fat crescent roll dough
  • 450 g (1 lb) lean corned beef or turkey pastrami, chopped
  • 1½ cups reduced-fat Swiss cheese, shredded

Creamy High-Protein Layer

  • 1 cup non-fat Greek yogurt
  • ½ cup reduced-fat cream cheese, softened
  • 1 tsp Dijon mustard
  • ¼ tsp black pepper

Toppings

  • 1½ cups sauerkraut, drained & squeezed dry
  • 1 egg white, beaten (for brushing top)
  • Optional: caraway seeds or everything bagel seasoning

Instructions

  1. Preheat oven to 190°C / 375°F. Grease a 9×13-inch baking dish.
  2. Make the creamy layer
    Mix Greek yogurt, cream cheese, Dijon, and black pepper until smooth.
  3. Bottom crust
    Unroll half the crescent dough and press into the bottom of the dish, sealing seams.
  4. Layer it up
    • Spread half the creamy mixture
    • Add chopped corned beef
    • Sprinkle Swiss cheese
    • Evenly spread sauerkraut
  5. Top crust
    • Unroll remaining dough over the top
    • Brush with egg white
    • Sprinkle seasoning if using
  6. Bake
    • Bake 25–30 minutes until golden and bubbly
    • Rest 10 minutes before slicing
