Ingredients
Wet
4 large eggs
1 cup plain Greek yogurt (0% or 2%)
2 tbsp lemon juice (fresh)
1 tbsp lemon zest
2–3 tbsp sweetener (erythritol, monk fruit, or sugar)
1 tsp vanilla extract
2 tbsp melted butter or coconut oil
Dry
1½ cups vanilla protein powder
1 tsp baking powder
Pinch of salt
Optional Lemon Glaze (High Protein)
½ cup Greek yogurt
1 scoop vanilla protein powder
1–2 tbsp lemon juice
Sweetener to taste
Instructions
Preheat oven to 350°F (175°C)
Grease a loaf pan or line with parchment paper
In a bowl, whisk eggs, Greek yogurt, lemon juice, zest, sweetener, vanilla, and melted butter
In another bowl, mix protein powder, baking powder, salt
Combine wet + dry until smooth
Pour into loaf pan
Bake 25–30 minutes, or until a toothpick comes out clean
Cool completely
Add glaze (optional) and slice
