Baked Blueberry Cottage Cheese Breakfast Bowls

🧾 Ingredients

  • 2 cups low-fat cottage cheese
    (blend smooth for best texture)
  • 4 large eggs
  • ½ cup vanilla or unflavored protein powder
    (whey or whey/casein blend works best)
  • 1 cup fresh or frozen blueberries
  • ½ cup rolled oats (optional but recommended for texture)
  • 2 tbsp maple syrup or honey (or zero-calorie sweetener)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt

🥣 Instructions

1️⃣ Prep

  • Preheat oven to 375°F (190°C).
  • Lightly grease 4 oven-safe bowls or ramekins
    (or one 8×8 baking dish).

2️⃣ Blend the Base

  • In a blender or food processor, add:
    • cottage cheese
    • eggs
    • protein powder
    • sweetener
    • vanilla
    • baking powder
    • cinnamon
    • salt
  • Blend until smooth and creamy.

3️⃣ Assemble

  • Stir in oats (if using).
  • Gently fold in blueberries.
  • Divide evenly between bowls.

4️⃣ Bake

  • Bake 30–35 minutes, until:
    • centers are set
    • tops are lightly golden
    • a toothpick comes out mostly clean

5️⃣ Cool & Enjoy

  • Cool 5–10 minutes before eating.
  • Serve warm or cold.
