Honey BBQ Chicken

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • Salt & black pepper
  • 1 tbsp olive oil

Honey BBQ Sauce

  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • ½ tsp smoked paprika (optional)

Instructions

  1. Season & sear
    Season chicken with salt and pepper. Heat oil in a skillet over medium-high heat and sear chicken 3–4 minutes per side until golden.
  2. Make the sauce
    Whisk BBQ sauce, honey, soy sauce, garlic powder, and paprika.
  3. Glaze
    Reduce heat to medium-low, pour sauce over chicken, cover, and simmer 8–12 minutes (until chicken reaches 165°F / 74°C).
    Uncover the last 2–3 minutes to thicken and glaze.

Creamy Garlic Parmesan Potatoes

Ingredients

  • 1½ lbs baby potatoes, halved
  • Salt
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup heavy cream (or half-and-half)
  • ½ cup grated Parmesan cheese
  • Black pepper, to taste
  • Optional garnish: parsley or chives

Instructions

  1. Boil potatoes
    Cook potatoes in salted water until fork-tender (12–15 minutes). Drain.
  2. Make sauce
    In the same pot, melt butter over medium heat. Add garlic and cook 30 seconds until fragrant.
  3. Creamy finish
    Stir in cream, Parmesan, salt, and pepper. Simmer 2–3 minutes until thick.
  4. Combine
    Add potatoes back to the pot and gently toss to coat.

Serving Tips

  • Spoon extra Honey BBQ glaze over the chicken.
  • Add a side of green beans, corn, or a crisp salad to balance the richness.
  • Great for meal prep—reheats well.
