White Chocolate Peppermint Truffles

Ingredients

For the Truffles

  • 1 cup sugar-free white chocolate chips
  • ¼ cup heavy cream
  • 2 tablespoons butter, softened
  • ½ teaspoon peppermint extract
  • ½ teaspoon vanilla extract
  • Pinch of salt

For Coating (Optional)

  • ¼ cup sugar-free white chocolate, melted
  • Crushed sugar-free peppermint candies or candy canes

Step 1: Make the Truffle Mixture

  1. In a small saucepan, heat heavy cream over low heat until warm (do not boil).
  2. Remove from heat and add white chocolate chips. Let sit 1–2 minutes, then stir until smooth.
  3. Stir in butter, peppermint extract, vanilla extract, and pinch of salt.
  4. Chill mixture in the fridge for 30–60 minutes, until firm enough to scoop.

Step 2: Form the Truffles

  1. Using a teaspoon or small cookie scoop, scoop chilled mixture and roll into balls.
  2. Place truffles on a parchment-lined tray. Chill 10–15 minutes to firm up.

Step 3: Optional Coating

  1. Melt additional white chocolate in microwave or double boiler.
  2. Dip each truffle into melted chocolate, then sprinkle with crushed peppermint candy.
  3. Chill again until chocolate sets (about 15–20 minutes).
