Ingredients (4 servings)
- Chicken breast – 1½ lb (680 g), diced
- Olive oil – 1 Tbsp
- Bell peppers – 2, sliced
- Zucchini – 1 large, sliced
- Broccoli florets – 2 cups
- Onion – 1 small, sliced
- Garlic – 3 cloves, minced
- Salt – 1 tsp
- Black pepper – ½ tsp
- Paprika – 1 tsp
- Italian seasoning – 1 tsp
Optional protein/cream boost:
- ½ cup Greek yogurt or cottage cheese
Instructions
- Cook chicken
Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and paprika. Cook 6–8 minutes until golden and cooked through. Remove and set aside. - Cook vegetables
In the same skillet, add onion and cook 2 minutes. Add garlic, peppers, zucchini, and broccoli. Cook 5–7 minutes until tender-crisp. - Combine
Return chicken to skillet. Sprinkle Italian seasoning and stir well. - Optional creamy finish
Lower heat and stir in Greek yogurt or cottage cheese until warm and creamy (do not boil). - Serve hot
