Ingredients
- ½ cup vegan butter, softened
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- ¼ cup unsweetened applesauce (egg substitute)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1½ cups rolled oats
- ¾ cup vegan chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the vegan butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the applesauce and vanilla until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fold in the rolled oats and vegan chocolate chips.
- Scoop 2-tablespoon portions onto the baking sheet, spacing them apart.
- Bake for 10–12 minutes, until edges are lightly golden but centers are soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
