High-Protein Apple Oat Bake (No Sugar, No Flour)

🛒 Ingredients

Base

1 cup (100 g) rolled oats

3 medium apples, peeled & grated

½ cup (120 ml) water

1 ripe banana, mashed

Protein Boost

¾ cup plain Greek yogurt (or skyr for extra protein)

2 large eggs

Fruit Add-ins

100 g dried blueberries

100 g raisins

Flavor (Optional but Recommended)

1 tsp cinnamon

½ tsp vanilla extract

Pinch of salt

👩‍🍳 Instructions

Prep the Oats

Add oats and water to a bowl.

Let soak 5 minutes to soften.

Prepare Fruit

Grate apples finely (keep juices).

Mash banana until smooth.

Mix Wet Ingredients

To the oats, add mashed banana, grated apples, Greek yogurt, eggs, vanilla, cinnamon, and salt.

Mix until well combined.

Add Dried Fruit

Fold in dried blueberries and raisins evenly.

Bake

Preheat oven to 180°C / 350°F.

Line or grease an 8×8-inch (20×20 cm) pan.

Pour batter in and smooth top.

Bake 35–40 minutes, until set and lightly golden.

Cool & Serve

Let cool 10–15 minutes before slicing.
